Since the 1660s, Gram Castle has been known for its proud agricultural traditions. As a completely natural development, agriculture today is run organically.
Dairy products
Throughout the summer, our cows graze on the meadows down to Gram Å. The fresh grass gives the milk a high content of healthy fatty acids. In the clover grass in the fields, we have sown herbs that contain essential oils and are rich in minerals. We manage our fields in this way because the herbs give the cows a varied, tasty feed and natural health. We handle our milk gently and have as few steps with it as possible so that it retains its good milky taste.
When the milk arrives at the dairy in Christiansfeld, the cream is skimmed off and poured into the characteristic red cream bags you can find in the cooler in all REMA1000 stores. The milk from Gram Slot is also the only so-called single estate milk in Denmark. This means that it is ONLY milk from the cows at Gram Slot.
Dairy packaging
Cream is one of the products that is produced from the milk from our cows. Cream is a dairy product that is skimmed from the milk before homogenization. In unhomogenized milk, fat, which is less dense, will rise to the top. In the industrial production of cream, this process is accelerated using centrifuges.
Cream comes in several qualities, depending on the total butterfat content.
Thick milk, is a product that has been used in the Danish kitchen for several centuries and is very simple to make in its basic structure. Sweet milk that is left at room temperature produces lactic acid bacteria. This process changes the structure of the milk so that it sours and solidifies and turns into thick milk. It is the same principle we use when we make condensed milk. However, it takes place under controlled conditions at a dairy, so that the thick milk has the same consistency from time to time. There are several qualities of cream, depending on the total butterfat content.
Buttermilk, is a type of milk with a low fat content and with a sour taste. It is originally a residual product from the process of churning cream into butter and in the old days was often used as pig feed. Today, it is mostly produced independently of butter production. Buttermilk stands out from the other types of milk based on its properties and production method. There are several qualities of cream, depending on the total butterfat content.
Sweet milk has a fat content of 3,5%. Sweet milk is the fattest of our milk types. Sweet milk is the oldest type of milk we have in Denmark. It is the milk product that comes closest to being "natural cow's milk", especially if it is delivered non-homogenized, which is our milk here at Gram Slot.
Skimmed milk was one of the first reduced-fat milk products when it was allowed in 1972. Our skimmed milk has a fat content of 1,5%. It is the second fattest milk that is produced here at Gram Slot. Its heavenly taste is perfect for a hot summer's day, but can of course also be enjoyed the rest of the year. It is adorned with a medium blue color. There are several grades of cream, depending on the total butterfat content.
The mini milk from Gram Slot is completely special. This was proven when it had only been on the market for 3 months. Then it won a test tasting among 6 other mini milks. Despite its low fat percentage of 0,5, the mini milk from Gram Slot tastes almost like skimmed milk. It was like the battle between David and Goliath when Gram Slot's organic mini milk won the taste test between 2010 different varieties of mini milk in the spring of 6.

Gram Slot is clearly the smallest brand and had only been on the market for approx. 3 months, and it is therefore with great pride that director and owner of Gram Slot, Svend Brodersen, states:

In our pastures, we always sow many different herbs, which also contribute to the good taste in the milk. Some of the herbs we use are: serradel, esparsette, rock clover, lemon balm, yarrow, chervil, parsley, bibernelle and plantain.”

Skimmed milk, is the milk we produce with the lowest fat content, with a content of 0,1%. The skimmed milk from Gram Slot is a little unusual. It tastes like milk, says Svend Brodersen, owner of Gram Slot and raised in the countryside, where he drank fat milk taken directly from the cooling tank every day. So despite removing almost all the fat from our skimmed milk, it still retains its milky taste. In the past, skimmed milk was also called skimmed milk.
Our cereal products. As we farm organically, we do not use artificial fertilizers or chemicals in our fields. We always make sure to harvest our grain when it has the best quality. We grind our flour in the most gentle way. The whole kernels are ground as in the old days on a slow-moving stone grinder. The stone grinder helps to ensure that the flour gets a very special structure. Likewise, the grain's germ and bran are preserved, as well as all the nutrients found in the grain.
At Gram Slot, we grow the wheat we use for our flour. The rye, also grown at Gram Castle. Rye is the tallest of the Danish cereals, it is a very hardy and thrifty plant. Rye can put down roots as far as 2 meters deep, which is why rye is often grown on the slightly lean soil.
We also sell Øland wheat, which is an old type of grain and resembles something in between the traditional spring wheat and spelled wheat. Øland wheat has a significantly higher protein content than ordinary wheat. Øland wheat is not as heavy to bake with as spelt, and bread baked with Øland wheat gives a fantastic rich and good taste. You just have to remember to put more water in the dough than with ordinary wheat flour.
At Gram Slot, spelled flour is also produced. Spelled is one of the ancient cereals that were chosen from when agriculture became more intensive. Spelled flour gives good and tasty bread with a nice golden colour. In a whole grain spelled flour like this, dietary fiber from the shell parts of the spelled kernels is preserved in the flour.
We also sell both fine-rolled and coarse-rolled oatmeal, which we have also grown ourselves.

At Gram Slot we also have other products that can be bought both in our farm shop and in REMA1000's many stores. We have potatoes, French fries, muesli mixes, bacon and Tapas sausages, which we get produced at Kisbæk Slagteri.
In addition, we also grow onions, scallions, Hokkaido pumpkins and red & white cabbage.
Many of our products are seasonal and therefore cannot be purchased all year round.
